<p>This dark chocolate salted caramel tart screams Happy Valentine’s Day, at least for me.  While my husband doesn’t eat chocolate, I haven’t had trouble sharing this tasty treat with the other Valentines in my life..</p>
<p>Seriously… this is a crunchy chocolate crust, filled with an ooey gooey sweet caramel, topped with a slightly bitter chocolate ganache and dusted with salt. Amazing.  There are several steps to this recipe, which each require cool time, but it is definitely worth the effort!  Read through the entire recipe to make certain you have plenty of time prior to serving.  While the cool times may be several hours, each step only takes a few minutes to complete.</p>

<p><strong>Confession of a *wannabe* foodie… </strong>I had every intention of making a special treat for my lovely non-chocolate eating, Allen.  Unfortunately, I couldn&#8217;t seem to make it happen this week, so not only am I a *wannabe* foodie tonight, I am also a *wannabe* sweet wife.  There is always next year, right? (shame)</p>

<p><strong>Dark Chocolate Salted Caramel Tart<br />
</strong><a href="http://www.saveur.com/article/Recipes/Chocolate-Caramel-Tart" target="_blank">Adapted from Saveur</a></p>
<p><strong>Crust<br />
</strong>10 Tbsp unsalted butter<br />
½ cup powdered sugar<br />
2 egg yolks<br />
1 tsp vanilla extract<br />
½ cup dark cocoa powder<br />
1 ½ cup of flour<br />
½ tsp kosher flake salt</p>
<p><strong>Caramel<br />
</strong>1 ½ cups sugar<br />
⅓ cup water<br />
3 Tbsp corn syrup<br />
¼ tsp salt<br />
½ cup cream<br />
6 Tbsp unsalted butter</p>
<p><strong>Chocolate Ganache<br />
</strong>½ cup heavy whipping cream<br />
4 oz dark chocolate, finely chopped</p>
<p><strong>Bake the Crust<br />
</strong>Preheat the oven to 350 degrees.</p>
<p>In a medium mixing bowl, cream the butter and powdered sugar until light and fluffy, about 3 minutes.  Mix in the egg yolks and vanilla and beat until fully incorporated.</p>
<p>Add the cocoa powder, flour and flake salt and beat on low speed until combined.</p>
<p>Press the crust evenly in the bottom and up the side of a 9 inch tart pan with a removable bottom.  Chill the unbaked dough in the refrigerator for 20-30 minutes, depending on your patience.  Use a fork and poke the bottom of the crust.</p>
<p>Bake the chilled crust for 15 minutes and let cool.</p>
<p><strong>Make the Caramel<br />
</strong>In a medium saucepan, over medium high heat, stir together sugar, water, corn syrup and salt.  Bring the mixture to a boil and continue heat, without stirring, until the mixture turns golden brown and a candy thermometer reads 350 degrees.  Make sure the candy thermometer does not sit on the bottom or side of the pan.  Quickly stir in the cream and salted butter.</p>
<p>Pour the caramel into the chocolate crust and chill in the refrigerator for at least 2-3 hours.</p>
<p><strong>Make the Chocolate Ganache<br />
</strong>In a small saucepan, bring the cream to a simmer.  As soon as the cream begins to simmer, remove from the heat, and pour over the chopped chocolate in a small bowl.  Allow the cream to melt the chocolate and stir the mixture until smooth and creamy.  Pour the chocolate ganache over the chilled caramel.</p>
<p>Let the tart cool until the chocolate sets.</p>
<p>Dust the tart with kosher flake salt and serve slightly chilled.</p>

<p dir="ltr">It is so cold and snowy in St. Louis these days, I couldn&#8217;t resist the opportunity to warm up the oven for these ultimate comfort brownies.</p>
<p dir="ltr">I am always looking for any excuse to bake and celebrate!</p>
<p dir="ltr">These Nutella brownies are a fantastic way to celebrate the merging of two cultures!  Combining chewy chocolaty American brownies, with creamy delicious hazelnut Italian Nutella, is a fantastic tribute to our culinary and cultural histories.  The Nutella flavor is somewhat subtle in these brownies, so don&#8217;t forget the chopped hazelnuts to really amplify the chocolate hazelnut goodness!</p>

<p dir="ltr"><strong>Nutella Brownies<br />

<p dir="ltr"><strong>INGREDIENTS:</strong><br />
1 cup unsalted butter (2 sticks)<br />
2 cups sugar<br />
1 cup Nutella<br />
4 large eggs<br />
1 cup dark cocoa powder<br />
1 teaspoon salt<br />
1 teaspoon baking powder<br />
1 teaspoon hazelnut extract<br />
2 teaspoons vanilla extract<br />
1 ½ cups all purpose flour<br />
2 cups dark chocolate chips<br />
2 cups chopped dry roasted (unsalted) hazelnuts</p>
<p dir="ltr">Preheat the oven to 350 degrees.</p>
<p dir="ltr">Grease a 13x9x2 inch glass pan.</p>
<p dir="ltr">Melt butter in a medium/large saucepan, over medium low heat.  Add the sugar and stir constantly for 3-5 minutes.  Remove from heat and stir in the Nutella.</p>
<p dir="ltr">Stir in the eggs, cocoa powder, salt, baking powder, and hazelnut and vanilla extracts to the butter-sugar mixture.  Stir vigorously until thoroughly combined.</p>
<p dir="ltr">Slowly add the flour and stir until just combined.</p>
<p dir="ltr">Stir in the chocolate chips and chopped hazelnuts.</p>
<p dir="ltr">Spread the batter into the greased 13x9x2 glass pan.</p>
<p dir="ltr">Bake for 30-35 minutes.</p>

<p>It was snow much fun making this Winter Onederland to celebrate my nephew Miles’ first birthday!  I was a little nervous with my friend Tim coming to join in the cake decorating fun, because let’s be honest, there is really only room for one chef in the kitchen, especially one as small as mine!  It turns out&#8230; we actually work pretty well together!  I think this cake adventure was even disaster free.</p>
<p>With every cake adventure I seem to learn a few good cake decorating tips:</p>
<ol>
<li>Definitely apply a thin crumb coat to your cake before icing, especially with white icing.  I recommend refrigerating the cake for 15-20 minutes after applying the crumb coat, to provide time for the icing to set.</li>
<li>Sugar cubes are amazing for winter wonderlands: ice blocks, igloos, snow, the opportunities are endless!</li>
<li>Insert a toothpick in fondant figures to secure the figures in place on top of a cake.</li>
<li>In order to minimize the mess, add sprinkles immediately after icing before the icing has opportunity to set.</li>
</ol>
<p><strong>Confession of a *wannabe* foodie&#8230;..</strong> While I always make homemade icing, I occasionally , okay frequently,cheat on the cake and filling, if I am decorating a cake.   Before I started decorating cakes, I had no idea you could buy pudding in cans, but it turns out that canned pudding is pretty fantastic as a cake filling.<br />

<strong>Amazing Vanilla Icing</strong><br />

3 sticks of unsalted butter, room temperature<br />
2 teaspoons of vanilla or seeds from 1 vanilla bean<br />
2 more teaspoons of vanilla<br />
6-7 cups powdered sugar<br />
5-6 Tablespoons of heavy whipping cream</p>
<p>In a large mixing bowl, add the butter and mix on medium speed until creamy and smooth.  Add 2 teaspoons of vanilla or the seeds of 1 vanilla bean and continue to mix until thoroughly combined.</p>
<p>Add the powdered sugar 1 cup at a time; blend completely after the addition of each cup.  Add the additional 2 teaspoons of vanilla and continue to mix.</p>
<p>With a whisk attachment, mix in the heaving whipping cream one Tablespoon at a time, at medium speed.  Increase the speed to high and beat until fight and fluffy.  Continue to add heavy whipping cream until you reach the desired consistency.</p>

<p>Today, however, I celebrate the end of 2012 and initiate an amazing new tradition&#8230; caramel popcorn.  I hereby decree I will consume these crispy, crunchy, clusters of golden goodness each New Year’s Eve to symbolize my sweet successes of the past year and the golden opportunities that await in the year ahead.</p>
<p>Try this.  You will not be disappointed.  You can be good next year!</p>
<p><strong>Confession of a *wannabe* foodie&#8230; </strong>This caramel popcorn is highly addictive.  It may be more addictive than Cheetos.  Consider yourself warned.<br />

<strong>CARAMEL POPCORN<br />
Ingredients<br />

<p>½ cup unpopped popcorn (18-20 cups popped corn)<br />
1 cup butter (2 sticks)<br />
2 cups dark brown sugar<br />
½ cup light corn syrup<br />
1 teaspoon salt<br />
2 teaspoons vanilla<br />
½ teaspoon baking soda</p>
<p><strong>PREP:</strong><br />
Preheat oven to 250 degrees Fahrenheit.</p>
<p>Pop popcorn in an air popper or Whirly Pop and transfer to a very large bowl.</p>
<p>In a large saucepan, over medium heat, melt butter, brown sugar, corn syrup and salt.  While stirring constantly, bring the mixture to boil, and be sure the melted butter is fully incorporated into the sugar mixture.  Once the mixture reaches a boil, stop stirring and let it boil, untouched, for approximately 4 minutes.</p>
<p>Remove the mixture from the heat and briskly stir in the baking soda and vanilla.  The caramel will transform in color and consistency from dark and syrupy to light and somewhat fluffy.  Pour half of the mixture over the popcorn and stir.  Pour the remaining half of the mixture over the popcorn and mix thoroughly until all the popcorn is completely coated.</p>
<p>Divide the popcorn into 2 9&#215;13 inch glass pans. Bake the popcorn in the preheated oven at 15 minute intervals for 1 hour.  After each 15 minute interval, stir the caramel corn.</p>
<p>After the caramel corn cooks for 1 hour, remove both pans from the oven and stir frequently as it cools.  Transfer the caramel corn to a large clean bowl to continue cooling.  Make sure you stir the caramel corn frequently as it cools to prevent it from clumping.</p>

<p>For the love of blackberry&#8230;. and lime.</p>
<p>It  is a happy day, a true sign of summer, when berries dominate the fruit  display at the grocery stores.  Hoards of strawberries, heaps of  blueberries and mounds of raspberries, but blackberries?  Where are the  blackberries and why are they always in those teeny-tiny containers?</p>
<p>This  summer we are participating in the <a href="http://fgharvest.blogspot.com/" target="_blank">Fresh Gatherings Harvest</a>, a  community supported agriculture (CSA) program run through the nutrition  and dietetics department at Saint Louis University.  We purchase our  “share” (or half-share; $17.50 per week) at the beginning of the season  and receive our “product” (produce) throughout the spring/summer/fall.   This is an incredibly easy and convenient way to purchase seasonal  fruits and veggies from local farmers.   In a quick 5 minute stop, we  have a crate full of produce for the week and the backbone of a seasonal  weekly menu!  In addition, the crate often includes fruits and veggies  that I might not normally find or buy at the grocery store&#8230; like  blackberries!</p>
<p>Oh the blackberries!</p>
<p>While  the blackberries rarely last a day in our house&#8230; I resisted all temptation for  the love of blackberry and lime sorbet!</p>
<p>Tart, tangy, and tasty&#8230; this is a perfect summer treat!</p>
<p><em><strong>Confession of a *wannabe* foodie&#8230; </strong></em>I consider it a miracle when the blackberries survive the ride home!<br />

<strong>Blackberry Lime Sorbet</strong></p>
<p><strong>Ingredients:</strong><br />
2 pints of blackberries<br />
1 cup simple syrup (cooled)*<br />
1 lime (zest and juice)</p>
<p>*Simple  Syrup: In a saucepan, over medium heat, dissolve equal parts sugar and  water (1 cup of water and 1 cup of sugar, or 2 cups of water and 2 cups  of sugar, etc.).</p>
<p><strong>PREP:</strong><br />
Wash  and puree 2 pints of blackberries (I use an immersion blender).  Strain  the blackberry puree through a fine mesh sieve (blackberries are very  seedy!).  Add the zest and juice of one lime and one cup of cooled  simple syrup to the pureed blackberries.</p>
<p><strong>FREEZE:</strong><br />
Pour the mixture into an ice  cream freezer and freeze according to the manufacturer&#8217;s directions.</p>
<p>Serve  immediately or freeze or later!  If you freeze the sorbet for later,  let it rest for 15 minutes at room temperature before serving.</p>

<p>In an attempt to be the ultimate aunt, I added one more to the list:</p>
<p>Sparkly. Pink. Hello Kitty. Gum. (one of Elise&#8217;s favorites)</p>
<p>Who knew the most challenging mission of this cake would be to locate and acquire gumballs!  Once gumballs were included as part of the mission, however, they could not be removed, as they were now an essential element in the cake completion.   Fortunately, my mother and sister voluntarily enlisted in the overt gumball operation.  Three stores and several phone calls later, a large box of gumballs appeared, concealed in a Dierberg&#8217;s bag, between the side door and screen door of our quaint brick bungalow.  With the success of the overt gumball operation, it was time to move on to the next phase of cake completion.</p>

<p>Pink pearl dust, applied with a paint brush (clean, and cake-specific, of course), provided the perfect pink sparkle to make this cake Elise approved.  I intended to make this cake over-the-top<em><strong> </strong></em>-sparkly wi<em><strong></strong></em>th actual sparklers, but lost too much time with the overt gumball operation.  Next New Year&#8217;s Eve, I plan to purchase several packs of sparklers to use throughout the year.<br />

<p>I don’t consider myself a necessarily girly-girl.  I love to camp, spend time outdoors, watch baseball and hockey, listen to loud rock and roll, love crime shows, etc.  I have to admit, however, I seem to be missing the superhero gene!  I appreciate a good superhero in the occasional movie or great costumes at Halloween, but if you ask me about Bruce Wayne, it may take a second before I figure out if you are referring to Batman or Superman.</p>
<p>I am always up for a birthday cake challenge, so I thought I would attempt Mason and Alex’s favorite superheros: Batman and Iron Man.  Despite my superhero ignorance, I am fairly confident with Batman.  Iron Man, on the other hand, is where that ignorance returns in full force!  I tried my usual hot spots for cake inspiration: blogs, Google image searches, Pinterest, movie/cartoon clips, etc., but Iron Man continued to elude my creativity.  This creativity block continued for several days and as the birthday approached, I began to fear that stifling creativity might, in fact, be Iron Man’s ultimate super power.</p>
<p>I unleashed a few of my decorating superheros, and the gold and silver pearl powders ultimately saved the day by kicking up the Iron Man mask and power supply.</p>
<p>I welcome any suggestions for future superhero cakes!  It can be difficult to find that delicate balance of awesome&#8230; that remains within my ability to execute!</p>

<p>My loving, sweet, adorable husband does not like chocolate.  Under the circumstances, I believe it is even appropriate to say that he hates chocolate.  He dislikes chocolate so much that he does not eat anything with chocolate in it&#8230; except for Mexican Mole!</p>
<p>As a baker, this has been a difficult character flaw, I mean trait, to accept.  As our dating days progressed into engagement and marriage, the issue of the chocolate lingered&#8230; no one to appreciate gooey chocolate chip cookies fresh from the oven, a lifetime of vanilla ice cream, cuddling on the couch with a steaming cup of hot cocoa and homemade marshmallows alone&#8230; the tragedy of missed opportunities, as you can imagine, abound&#8230;</p>
<p>After almost four years of marriage, however, I determined there are a few surprising benefits (okay, two) to a non-chocolate-eating husband!</p>
<p>1.  There are many circumstances in which I am *forced* to eat 2 desserts; it is only polite.  If dessert at a certain dinner or event, for example,  happens to be chocolate, I politely devour mine and then do a quick switch of the plate when no one is looking to politely finish Allen’s dessert as well.</p>
<p>2.  I explore and test a lot of amazing non-chocolate desserts, which I might normally overlook!</p>
<p>These homemade vanilla wafer cookies are a fantastic example of a cookie I might never have tried if it were not for my chocolate-fearing husband and my heightened awareness of non-chocolate eaters.</p>
<p>These delicate, crispy, vanilla bite sized cookies will definitely make you think&#8230; what chocolate chip cookie?!?</p>
<p><em><strong>Confession of a *wannabe* foodie&#8230; </strong></em>Although I do love to harass Allen for his disdain of chocolate, I do love all the non-chocolate desserts we discover!</p>

<p><strong>Vanilla Wafers</strong><em><br />
adapted from the Retro Desserts Cookbook by Wayne Harley Brachman</em></p>
<p><strong>INGREDIENTS:</strong><br />
1 ¼ cups all-purpose flour<br />
¼ cup cornstarch<br />
1 teaspoon baking powder<br />
½ teaspoon baking soda<br />
¼ teaspoon salt<br />
½ cup (1 stick) butter (at room temperature)<br />
1 cup sugar<br />
½ vanilla bean<br />
1 large egg<br />
2 teaspoons vanilla extract<br />
¼ teaspoon lemon extract</p>
<p><strong>PREP:</strong><br />
Preheat oven to 375 and line 2 cookie sheets with parchment paper or a silicon mat.<br />
Scrape the inside of half of vanilla bean, with a dull knife.  Gently rub the vanilla beans, by hand, into 1 cup of sugar until the vanilla beans are fully incorporated and the sugar is fragrant.</p>
<p><strong>MIX:</strong><br />
In a medium mixing bowl, sift together: flour, cornstarch, baking powder, baking soda and salt.  Re-sift these dry ingredients together 3 times!</p>
<p>In a large bowl, beat together the room temperature butter and the vanilla sugar for 2 minutes, until light and fluffy.  Once the butter/sugar mixture is light and fluffy, beat in the egg, followed by the vanilla extract and the lemon extract.  Once the batter is thorouhgly mixed, reduce the speed of mixer to low.</p>
<p>Gradually, on low speed, add the flour mixture to the wet mixture until just combined.  Do not over-mix.</p>
<p>Drop rounded teaspoons of the dough on the lined cookie sheet.  In order to prevent the dough from sticking to the teaspoon, dip the teaspoon in water prior to scooping the dough.  Gently flatten each cookie slightly prior to baking.</p>
<p><strong>BAKE:</strong><br />
Bake cookies for 8 minutes, until the cookies are lightly browned along the edges.</p>

<p>Ohhhh yes… homemade oatmeal cream pies!  You may be thinking&#8230;<br />
When was the last time I actually ate an oatmeal cream pie?!?<br />
or…<br />
Why would I want to bake a homemade version of a pre-packed vending machine snack?!?<br />
Just take one look at that ooey gooey oatmeal cream pie and trust me!</p>
<p>The past few years, I have helped with a retro bowling fundraiser for <a href="http://guardianangelsettlement.org/" target="_blank">Guardian Angel Settlement Association (GASA)</a>, an amazing organization in Saint Louis that serves the poor by helping them improve the quality of their lives and achieve economic independence.  In addition to raising money, this event is a wonderful opportunity to get together and celebrate such an incredible organization in the Saint Louis community.  You know it’s a pretty fantastic fundraiser when it includes, all you can eat, drink, bowl, and shoot pool at an old school bowling alley that requires you to keep your own score!  The event is held at <a href="http://saratogalanes.com/index.php" target="_blank">Saratoga Bowling Lanes</a>, in operation since 1916, and supposedly the oldest bowling alley west of the Mississippi.</p>
<p>I thought it would be fun to contribute a retro dessert buffet, and where better to start than with the original Little Debbie Snack Cake… the Oatmeal Cream Pie.</p>
<p><em><strong>Confession of a *wannabe* foodie&#8230;</strong></em> these taste amazingly similar to the original Little Debbie Oatmeal Cream Pies, yet oh so delicious!<span id="more-232"></span></p>
<p><strong>Oatmeal Cream Pies:<br />
</strong><a href="http://cravingchronicles.com/2009/04/01/homemade-oatmeal-cream-pies/" target="_blank"><em>Adapted from The Craving Chronicles</em></a><strong></strong></p>
<p><strong>Cookie Ingredients:</strong><br />
1 cup butter (2 sticks) at room temperature<br />
¾ cup dark brown sugar<br />
½ cup sugar<br />
1 Tablespoon molasses<br />
1 teaspoon vanilla<br />
2 eggs<br />
1 ½ cups flour<br />
½ teaspoon salt<br />
1 teaspoon baking soda<br />
½ teaspoon cinnamon<br />
1 ½ cup whole rolled oats</p>
<p><strong>Cream Filling Ingredients:</strong><br />
1 teaspoons hot water<br />
¼ teaspoon salt<br />
7 oz marshmallow cream<br />
½ cup shortening<br />
1/3 cup powdered sugar<br />
½ teaspoon vanilla</p>
<p><strong>PREP:</strong><br />
Preheat oven to 350°F.<br />
Line 2 large cookie sheets with silicone baking mats.</p>
<p><strong>MIX:</strong><br />
In a medium bowl, sift together flour, salt, baking soda, and cinnamon and set aside.</p>
<p>In a large mixing bowl, beat butter, brown sugar, and sugar until fluffy.  Add molasses, vanilla, and eggs and beat until well mixed.</p>
<p>On low speed, gradually add the flour mixture to the butter mixture and beat until just combined.</p>
<p>Stir in the oats.</p>
<p>Drop cookies by rounded Tablespoons onto a baking sheet, providing plenty of space between each cookie as they will spread.  I use a small ice cream scoop or cookie scoop to assure that all cookies are the same size.</p>
<p><strong>BAKE:</strong><br />
Bake cookies for 10-12 minutes until they begin to brown.  Do not over bake, to keep your cookies soft and chewy for your oatmeal cream pies!</p>
<p><strong>CREAM FILLING:</strong><br />
While the cookies are baking, prepare the cream filling.  Dissolve the salt in the hot water and set aside.</p>
<p>In a large mixing bowl, beat together marshmallow cream, shortening, powdered sugar, and vanilla until light and fluffy.  Once the mixture is light and fluffy, beat in the cooled salted water.</p>
<p><strong>CONSTRUCT:</strong><br />
Spread the desired amount of cream filling on the flat side of one cookie and top with a second cookie.</p>

<p>I started drafting a few cake ideas for Robotto Otto’s first birthday when my husband Allen nonchalantly mentioned that I could not make a robot cake without some electronics!  My knowledge of circuits, however, ended with grade school science.</p>
<p>Needless to say, we decided to divide and conquer.   I added the lights into the cake design and Allen headed off to RadioShack.  Allen created a series circuit with three LED’s, two nine volt batteries, a switch, a bunch of wires, a project box, some solder, and a bit of electrical tape.<br />
(he totally wrote this section, see my aforementioned self proclaimed electronic ignorance)<br />
<span id="more-203"></span>We’re not sure if this is necessarily the best way to create a simple light box, but it definitely worked and we didn’t start a fire!</p>
<p>Once the light box was complete, I simply covered it in fondant, and added it to the cake.  This was a great project to ease into adding electronics to baked goods!  We were really happy with the final result and can’t wait to tackle the next project!</p>

Sometimes, it is important to decorate the back of a cake… to disguise imperfections in the fondant!</p>
